Rolled Pork Loin Roast

Ingredients
- 1/2 cup soy sauce
- 1/2 cup sherry
- 2 cloves garlic
- 1 tbsp dry mustard
- 1 tsp ginger
- 1 tsp thyme
- boneless pork loin roast
- 10 oz red currant jelly
- 1 tbsp soy sauce
- 2 tbsp sherry
Steps
Marinade
- Combine soy sauce, sherry, garlic, dry mustard, ginger, and thyme.
- Marinate boneless pork loin roast in mixture overnight.
Roast
- Roast at 325 F for 2.5-3 hours.
- Add potatoes to the roasting pan near the end.
Gravy
- Heat red currant jelly, soy sauce, and sherry together until combined. Serve alongside the roast.
Red currant jelly is the classic pairing here - grape jelly also works.
